{Kale + Quinoa Salad with Citrus and Soy}



it's  january and there are two things i'm obsessed with right now...  citrus and succulents.  oh and quinoa.  i made up this salad recipe for lunch today and it was just the thing i was craving.  healthy and bright... clean and fresh.  the balance of soy and honey with the miso and ginger = perfection.



{Kale + Quinoa Salad with Citrus and Soy}

1.5- 2 cups Red Quinoa cooked
1/2 bunch scallions, chopped
1 bunch Kale (chopped fine, like cabbage)
5 Clementines, or oranges peeled and chopped

{Miso Dressing}
Red Miso paste ( about 1/4 cup)
2-3 T soy sauce
3 T honey
1/4 cup sesame oil
2-3 T Rice Vinegar
grated fresh ginger (to taste)
2 cloves garlic


combine the cooked red quinoa, scallions, kale, and clementines.  mix dressing ingredients in food processor until creamy and well combined.  taste dressing and adjust as needed.  in a large mixing bowl pour dressing over salad and mix well.

* this is my recipe... i try to do my best to record measurements, but i'm not really a measurements kind of girl.  these are suggestions.  my best advice is to taste it... and adjust as needed.  bon appetit.

some of you may know... some may not.  but i have been battling anxiety and depression.  real bad.  i kind of feel like there are a couple of years that i got lost in, but i'm doing better.  it was a hard decision... to go on medication.  but, i did it.  it was like i was sick... and now i'm better.  i am starting to see things again.  the days tumble with meanings...

this is my husband's company nest woodworking. i am so proud of this man... he started his own company, he is such an amazing designer and woodworker... not to mention a wonderful father, and husband. jackpot.
i can't wait for him to design our new kitchen in our first home... and, i have to have one of these reclaimed tub shelves.
